What makes you think that Ted picked a UDFA in favor of Sitton? We know few to likely zero reliable details about WHY he was released yet, so we should probably table the speculation masqueraded as fact for at least a day or so until the real story can come out.

There is absolutely no way in hell Ted would cut a pro bowler just so he can keep a UDFA who wouldn't make the active 46 most weeks. Something else is going on, we just don't know it yet...but it's NOT just so we can keep Dorleant on the inactive 7.
