What are you cooking this weekend ?

Grilled Chicken, maybe Grilled Fish

Fresh Vegetables , maybe a fruit Cobbler

What's on your menu ?

Ok in a weeks’ time we had a few southern dishes. Can't remember them all.
Okra
Turnip greens
Ice tea (of course I always had unsweet but the other stuff was there and in abundance)
Had a delicious ham
corn
corn bread
biscuits
green beans
black eyed peas
coleslaw
"ugly" green apples raw and cooked up.
Something that looks like it’s a cousin to the blackeyed pea that came off her grandaddy's farm a bunch of years ago.
muscadines that also came from his farm.
mashed taters
baked taters with cajun seasoning
apple pie baked in a brown bag
chicory coffee.
lasagna (It's ok to include this as my mother's family comes from Southern Italy and that is where it originated.)

I have forgotten most of the dishes we had and didn't include any of the ones we had at a restaurant.

Starting Tomorrow (Friday) , I'll be slow cooking a Corned Beef Brisket in the crock pot with onions and baby carrots. I'll be having fresh baked jumbo biscuits and fruit cocktail to complete my Saturday evening meal. Fresh Cold unsweetened Tea with real sliced lemon wedges. Diner will be at 5 pm , this will allow for a 9pm bowl of Orange Sherbert.


What's on your weekend Menu ? French , Mexican , Chinese , Eastern European , etc. Spill the beans ! LOL πŸ–

Who woulda ever thunk it hahahahahaha? You LITERALLY meant "cooking" - food.

I can't stand any of what I refer to as "crap" - vegetables, spicy food, etc. - just pure meat - nice greasy salty hamburger with potato chips - none of these stinky new age crap chips - Doritos or whatever.

That and plenty of ice cream, cookies, candy, etc.
Expressing the Good Normal Views of Good Normal Americans.
If Anything I Say Smacks of Extremism, Please Tell Me EXACTLY What.

Will any be cooking this Easter Weekend ?

I will be with family and friends on Sunday . We will enjoy Ham, a full variety of side dishes, and deserts .


If you are willing to share with the rest of us , we would like to read about your main or side dish.
Deserts are also a great treat, will you be having a special pie, cake ,or ice cream ?

October is upon us, a good time to fix Soups, Stews, and Chili. Some are best cooked slow in a crock pot. One of my favorites is Blackeyed Peas with Chopped Onions and Country Ham. Slow cook for 24 hours. The more time in the pot, the more flavor in the bowl.

Are you having a fall harvest or Last great cookout before Winter, tell us about it. Some have a big Seafood Throw-down with everyone's favorites Some like to prepare pork or chicken or beef as a main course.

Anyone doing anything different for Thanksgiving this year?

I'm considering inviting a bunch of international students over and giving them not a "traditional Thanksgiving" but instead a smorgasbord showing the variety of what gets considered as "American" food by various Americans. (I have to decide in the next few days whether I can actually get the place cleaned up enough to host visitors, and how many.)

So far I have as possibilities:
1. The World's Greatest Pecan Pie. (mom's secret recipe)
2. Wade's 8-cheese Mac-n-cheese.
3. Collard greens with bacon and hot sauce.
4. Cajun sweet corn. (Essentially 1-2" chunks of sweet corn boiled using Zatarain's liquid shrimp boil, and served with a side of Cajun-spiced butter or mayo.
5. Gaspacho Salad Diablo -- Gaspacho with extra chilies. Served well-chilled but veggies left chunked rather than pureed.
6. Grilled or broiled jumbo shrimp.
7. Boiled quail eggs with deviled egg mayo.
8. Fresh-baked crusty rolls.
9. After dinner cheese plate with cow (extra sharp cheddar), goat, and sheep cheeses.
10. Sage and mushroom stuffing.
11. Lamb, rosemary, and wild rice stuffing.
12. Prime rib.
13. Beef Wellington. Oh, okay, this is not American. Someday I am going to find an occasion to cook it, though.
14. Steamed chantarelle and trumpet mushrooms.
15. Midget kosher dill pickles or sliced fresh cucumbers in vinegar.
16. Raw carrots, celery, and radish "relish tray."

Any suggestions?
